This is something I like to call PanoPortraits.  It basically involves setting everything manual, including the focus and f/stop and then taking a series of photos all around the person, maintaining the proper depth-of-field throughout the panorama.  I love it.  Better much bigger though :) Sarah in Breckenridge House PanoPortrait (via Tyler Knott Flickr)
